Four days ago...



All caught up! Several other cooks, from seafood to pork to chicken to veggies, were either not good enough or I didn't snap pics on my iPhone. Brisket pics from today incoming tonight. 

Somewhere around there we had our first KCBS competition in Gettysburg, PA. 15 years old, two years in grilling/barbecue. Slightly over my head, but got a 24th/44th/45th/46th out of 48. Hey, at least no DAL.

Wow It's Been A While

It's been about ten months since I last bumped this thread, and I've made a lot of progress.

I left you last only a month or two after I bought my first real smoker, an El Cheapo Brinkmann. Certainly the thing does some stuff better then a Weber grill, the air control and temperature control is a bare! I did my first competition with that smoker last fall and took a prize over 20 other cooks! I was really happy, especially with the fact I was fifteen years younger then anyone there. I also had some good cooks on that thing.

Also started vending at the high school for organizations and clubs, and it's been great! Keep getting rave reviews from students and teachers alike! Hopefully it'll get me into a better college! :D

I finally found the need to upgrade to something bigger, easier to control, while still affordable. I jumped on a used 30 inch Chargriller smoker, and I scrubbed/scraped down the inside, painted the outside. She'll be a much better cooker renovated and a firebox is coming from a Brethren.

I was late to entering competitions but look to compete at New Holland and Barrington, and maybe Staten Island and Victory BrewBQ in Downington. Hope to see any of you there!

Cooking two racks of ribs tomorrow and making andouille rib tip sausage! Will try to update this more.
